Chickpea Avocado Salad

Chickpea Avocado Salad

Ingredients

  • 1 can (15oz) Organic Chickpeas (rinsed and drained)
  • 2 large Ripe Avocados (cubed)
  • 1/2 cup Red Onion (finely diced)
  • 1 bunch Fresh Cilantro or Parsley (chopped)
  • Dressing: 2 tbsp Extra Virgin Olive Oil, 1 Fresh Lime (juiced), Sea Salt, and Cracked Pepper to taste.

Preparation

  1. In a large mixing bowl, combine the drained chickpeas, diced avocados, and red onion.
  2. Add the fresh herbs over the top.
  3. In a small jar or bowl, whisk together the olive oil, lime juice, salt, and pepper until emulsified.
  4. Pour the dressing over the salad and toss gently to combine (be careful not to mash the avocados).
  5. Serve immediately or chill for a refreshing Earth-to-Soul experience.
